Hazelnut Chocolate Mini’s (Vegan/ GF/ Raw)

Ever had raw brownies before? Like.. this one?

They’re pretty amazing, aren’t they?
Well, I didn’t think it’d be possible, but I found something better: Raw brownie sandwiches, filled with healthy raw chocolate frosting.


How could frosting possibly be healthy, you ask? It’s all thanks to one secret ingredient… avocado.

Now, before you go all “EWWWWW GROSS!” on me. Give this recipe a go. Avocado, packed with healthy monounsaturated fat,Β gives it a rich and silky mousse texture; the cocoa powder gives it a.. well.. chocolatey taste, which is enhanced by the hint of sea salt; and the peanut butter just seals the deal on covering up any avocado-ey aftertaste.

Raw Hazelnut Chocolate Mini’s

For the brownies:
2 C Hazelnuts (Plus extra for garnish)
1 C Medjool dates, pitted
1/2 C Cocoa powder
1/4 C Agave or maple syrup

1. In a food processor (or VitaMix), process hazelnuts until it becomes flour-like.
2. Add in the rest of the ingredients and process to mix everything until a thick sticky dough forms. Take it out and mix a bit by hand if necessary. Flatten and roll into around 3/4 inch thickness.
3. Cut into around 30 squares of the same size with a sharp knife. Set aside.

For the frosting:

1 Avocado
1/4 C Maple or agave syrup
1/2 C Cocoa powder
3 Tbsp Peanut butter
Pinch of salt

1. Put everything in a blender and blend until very smooth.
2. Taste and add more syrup if desired.

To assemble:

This is pretty self explanatory. Put around 1 tbsp frosting on a square and top with another square. Make it triple-decker if you want. Garish with halved hazelnuts.
